Tomatillo & Chipolte Salsa

When the weather is hot I love to make this salsa. It’s super easy to make and goes great with some tortilla chips and a cold beer – or margarita if you like. The chipotles add a lot of heat and a great smokey flavor.

Tomatillo & Chipotle Salsa

1 1/2 pounds tomatillos
6 cloves of garlic, peeled, sliced thin
1 – 7 ounce can Chipotle peppers in adobo sauce
1 teaspoon salt

Heat broiler to high. Peel and clean the tomatillos. Place on a cookie sheet and char under the broiler until blackened.


Place the sliced garlic in a dry pan on the stovetop and toast on medium – low heat for 5 minutes.

Combine all of the ingredients in a blender until smooth.

Serve with tortilla chips or as an accompaniment to grilled meats.
