It’s amazing to see piles of fresh corn at the Farmers Market when you are in the city. And, I’m a sucker for a sign that says “Picked 4 hours ago”. Growing up my uncle grew corn and all I could think as a little kid was that I could eat corn forever there was so much! A really great simple Mexican recipe for eating fresh corn only involves a few ingredients: cayenne, fresh lime juice, mayonnaise and Cojita cheese (it’s flavor is similar to feta). I love making this spicy lime butter. There are millions of butters out there. This one is nothing new – just absolutely delicious!

Corn with spicy lime butter

Spicy Lime Butter

1 stick of soft butter

1 Serrano pepper, minced

Grated zest of 1 lime and juice

1/2 Tablespoon chopped cilantro

1 Tablespoon chopped chives

Salt and pepper

 

Combine the butter, Serrano pepper, lime zest, cilantro, chives, salt and pepper in a small bowl and stir together. Add the lime juice at the end and mix well. Rub on freshly cooked corn and sprinkle on a little extra salt!
