My dear friend and furniture designer Marc Desplaines of Antoine Proulx shared this recipe with me years ago. The weather just called for it today. I’ve substituted ground turkey from his original recipe.
Tofu Turkey Lettuce Wraps
1 1/2 pounds ground turkey
1 package firm Japanese style tofu
4-inch piece of ginger, finely grated
2 cloves of garlic, minced
1 pound carrots, grated
3 scallions, sliced thin
5 tablespoons Soy sauce
Pinch of sugar
In a large skillet saute grated carrots with the ginger and garlic on medium-low hear for about 5 minutes. Add the ground turkey and continue to cook until the meat is almost done, about another 8 minutes.
Drain the tofu and crumble it into the meat mixture. Cook covered about 10 minutes until the water from the tofu evaporates. Add the Soy sauce and a pinch of sugar and cook another 10 minutes.
Serve in red leaf lettuce cups – sprinkled with scallions or over steamed Japanese rice. Sprinkle with Ichimi Togarashi.
